Stewed Sea Cucumber with Siberian solomonseal (Huang Jing) and Spring Onion |
| Ingredients: |
3 tsps Siberian Solomonseal(Huang Jing) 4 Sea Cucumber, soaked until soft 150g snow beans 1 Sprig Spring Onion, sectioned 4 slices Ginger, 1 cup stock
Seasoning 1 tsps light soy sauce, 1 tbsp wine 1 tbsps oyster sacue, 1/2 tsp salt Sesame Oil
Sauce 1/2 tsp caltrop starch, 1 tsp water.

Wash Siberian Solomonseal(Huang Jing). Cook with 1 cup of water until only 1/2 cup of thick liquid remains.

Remove dirt from abdomen of sea cucumbers. Wash and cook for 15 minutes. Rinse and cut into pieces.

Remove tough strings from snow beans and wash.

Stir fry ginger and spring onion with 2 tbsps of oil fragrant. Add snow beans and stir fry until done. Dish up. Heat 1 1/2 cups of water. Add Sea Cucumbers, stock adn liquid from cooking Siberian Solomonseal. Stew until Sea Cucumbers are soft. Add spring onion, snow beans and seasoning and bring to the boil. Thicken with sauce. |
